Cook eggs in a cup in the microwave


Cooking spray or olive oil 2 eggs, 1 tablespoon of milk, 1 tbsp grated cheddar cheese, 1 tablespoon finely chopped red peppers,1 teaspoon finely chopped chives or spring onions greens pinch of salt, Pinch black pepper


Spray the inside of a large, microwave suitable cup lightly with cooking oil or coating the inside of the cup of olive oil spray. 2 tear 2 eggs in a cup, add 1 tablespoon of milk and beat with a fork.   3 Add grated cheese and other extras such as chopped red peppers or chives. Add a pinch of salt and pepper. Stir with a fork until everything is mixed well.   4 Microwave and stir 20 to 30 seconds increments: microwave for 30 seconds to high. Remove microwave and stir with a fork. Return to the microwave and boil for another 20 to 30 seconds. (Whether it’s 20 or 30 depending on the performance of your microwave, you can experiment to see what works best for your situtation.) You will see points of hard-boiled egg blend to shape. Remove and stir again. Return to the microwave and boil for another 20 to 30 seconds or until the omelette has set.
